      Abstract: This research evaluates the intakes of the antioxidant vitamins A (retinol), C (ascorbic acid) and E (tocopherols) as obtained from food consumption calculations based on the most recent food budget survey (JHEIS, 2010). The estimated antioxidants intakes were analyzed using a nutrition analysis software program (Food Processor, 2008). The results showed that the means of daily per capita intakes of vitamin A, C and E were 781 μg, 123.3 and 8.4 mg/day, respectively. Amongst the Jordanian household intakes tomato was the best source of vitamins A and C. Beside tomatoes, carrots, fresh spinach and melon were at the top of vitamin A food sources. In addition, corn and olive oils and Jordanian bread were at the top of vitamin E sources. Tomatoes, citrus, green peppers and cucumber were the best sources of vitamin C. It is concluded that the Jordanian diet contains reasonable amounts of the antioxidant vitamins A, C and E. It is concluded that the Jordanian diet meets the recommendations of vitamin A and that vitamin C intake was higher than the recommendations whereas vitamin E intake was below the recommendations.       This study aimed at measuring the tannin contents of different plant species that are traditionally used in the Jordanian diet. Thirty nine selected plants belonging to 21 families and 37 genera were analyzed in this study. Tannin contents had not been determined in many of these species. Fresh samples were oven-dried and their tannin contents were chemically determined using Folin-Denis reagent method. The absorbance was measured by spectrophotometry at 760-nm wavelength and tannin content was calculated using a tannin-standard curve. Results showed that tannin contents of the analyzed species were highly variable, ranging from 25 mg/kg in plums and verbena to 42961 mg/kg in rosemary (on dry matter basis). It is therefore expected that due to variability in tannin content, different nutrition-health effects may result, a matter which requires other studies to clarify these effects.       This research was performed to study the effect of date palm fruit (Phoenix dactylifera L.) on the 7,12- dimethylbenz (α) anthracene-induced mammary cancer in rats. The effect of feeding the fruit at two maturity stages (“Rutab” and “Tamr”) was compared to that of feeding raw soybean seeds and injection with two drugs, preventive and curative against mammary cancer, i.e., tamoxifien and 17-β-estradiol respectively. For comparison purposes, another group of rats was injected with sesame oil. Eighty three female weanling Sprague-Dawley rats were randomly distributed into the treatment groups. Each group received one of the dietary or drug treatments. Another group of rats that received neither drug nor special dietary treatment served as a positive/carcinogen control group. Still another group was injected with sesame oil, which is the carcinogen vehicle at the time of injecting the carcinogen, to serve as a negative/carcinogen control group. Three weeks after the carcinogen administration, animals were palpated twice per week to record the appearance of any lesion. At the end of the 26-week feeding period, all animals were killed. Palpable lesions, mammary tissue, and associated lymph nodes were removed, fixed, and prepared for histopathological examination. The diets that contained the date palm fruit reduced significantly (P<0.05) the incidence rate of mammary cancer, palpable tumour multiplicity, tumour size and weight compared to the positive/DMBA control group. In conclusion, the date palm fruit (Phoenix dactylifera L.) protected against DMBA-induced mammary cancer in the initiation, promotion, and progression stages of DMBA-induced mammary carcinogenesis. The effect was comparable with that of the two drugs (tamoxifen and 17-β-estradiol). Further research is required to elucidate the possible mechanisms that might have contributed to the preventive effect of this fruit against mammary cancer.       Hiba Al–Sayyed and H, " Possible effect of Thyme (Origanum syriacum L.) on Iron Bioavailability " , "The Journal of Saudi Society for Food and Nutrition",Vol.2,No.2, Saudi Society of Food and Nutrition , Saudi Arabia, 06/01/2007 :الملخص
      The bioavailability of iron from different levels of sun-dried thyme (0.0%, 1.25%, 2.5%, and 10.0% of the diet weight) was studied in Sprague-Dawley rats. Iron absorption, liver and serum iron concentrations were taken as parameters for bioavailability. Hemoglobin concentration and red blood cell count were also measured. The highest food intake was for the control group (426.8±17.5 g) with lower (P ≤ 0.05) food intakes of all rats fed thyme-based diets. Food intakes of these groups were 223.8±17.5, 208.50±19.2, and 170.1±21.4 g for the 1.25%, 2.5%, and 10% thyme diet groups, respectively. Rats fed thyme-free diet (control group) gained weight (71.9±7.5 g), whereas all rats on thyme - based diets had significant weight loss. Weight loss ranged from 26.7±7.5 g in the 1.25% thyme diet group to 53.0±9.2 g in the 10% thyme diet group. Consequently, feed efficiency ratio ranged from – 35.1±5.6 in the 10% thyme diet group to 16.9±4.6 in the control group. Apparent iron absorption (%) was the highest (42.9±7.3 %) in the 10% thyme diet group and the lowest in the control group (14.1±5.6%). This was reflected by liver iron concentrations of 137.6±29.7 and 987.1±36.4 μg/g dry liver in the control and 10 % thyme diet groups, respectively. Rats exhibited normal values for the measured hematological parameters. In conclusion, it seems that there is a possible relationship between thyme content which is rich in tannins and the adverse effects indicated by high mortality and weight loss in rats.

      The effect of date palm fruit feeding (to female Sprague-Dawley rats with 7,12-dimethylbenz()anthracene–induced mammary cancer) on the hormone 17--estradiol concentration was compared to that of feeding soybean seeds and injection with two drugs (one preventive against and the other curative for 7,12-dimethylbenz()anthracene-induced mammary cancer i,e. tamoxifen and the hormone 17--estradiol). The date palm fruit raised the hormone concentration significantly (p < 0.05). The hormone concentration was positively correlated with the palpable tumor latency, and negatively correlated with tumor incidence rate and multiplicity. It is concluded that the preventive effect of the date palm fruit against 7,12- dimethylbenz()anthraceneinduced mammary cancer is related to the effect on the hormone 17--estradiol. Download
